INGREDIENTS – SERVES 8


Coconut oil to grease

200g porridge oats

Pinch of baking powder

Pinch of salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

20g chopped pecans, cashews or macadamia nuts

200g berries of your choice (we LOVE blueberries!)

250g Greek yoghurt

100ml unsweetened almond milk

3 eggs

1 medium ripe banana, mashed

2 tbsps honey

METHOD


Preheat the oven to 170c / 350f

Grease several baking dishes with the coconut oil

Combine all dry ingredients into a bowl

Mash the banana and add the remaining wet ingredients

Gradually combine both mixtures and fold together

Transfer the mix into the baking dishes and spread evenly

Bake for 45 minutes – 1 hour until golden brown on top

ONCE COOLED, STORE YOUR LEFTOVERS IN AN AIRTIGHT CONTAINER AND KEEP FOR UP TO 2 DAYS, PERFECT!
